    How to Make a Sourdough Starter From Scratch in 7 Days

    A sourdough starter is a stable culture of wild yeast and lactic acid bacteria living in a flour-and-water paste. You do not need to buy one, and you do not need pineapple juice, grapes, or any other trick. You need flour, water, and about a week.

    What you need

    • Whole wheat or rye flour for the first few days — the bran carries far more microbial life than white flour and gets things moving faster
    • White bread flour thereafter
    • Water — if yours is heavily chlorinated, leave it out overnight or use filtered
    • A jar, loosely covered so gas can escape

    Day by day

    Day 1

    Mix 50g whole wheat flour with 50g water. Stir to a thick paste. Cover loosely, leave somewhere warm (75–80°F is ideal).

    Day 2

    Probably nothing. Maybe a few bubbles. Do nothing, or stir it. Both fine.

    Day 3 — the false rise

    Many starters erupt with activity around now and smell sharp, cheesy, or like vomit. This is not yeast. It is a bloom of Leuconostoc bacteria, and it will die off as the culture acidifies. Nearly everyone who gives up quits here, or on day 4 when it goes quiet.

    Begin discarding and feeding: keep 50g of starter, discard the rest, add 50g flour + 50g water.

    Days 4–5 — the quiet spell

    Activity often stops completely and the smell turns sour or acetone-like. This is normal and it is the culture sorting itself out. Keep feeding once every 24 hours. Switch to white bread flour, or a 50/50 mix.

    Days 6–7 — real activity

    You should see a genuine, predictable rise — doubling within 4–8 hours of feeding — and the smell turns pleasantly tangy and yoghurty. That rhythm, not the bubbles, is the sign you have a working starter.

    How to know it’s actually ready

    The reliable test is consistency: it should double predictably, within a similar window, after several consecutive feedings. A starter that doubles once and then sulks is not ready to raise a loaf.

    The float test — a spoonful in water — is a reasonable quick check but produces false negatives with wetter starters. Trust the rise-and-timing pattern first.

    Keeping it alive

    • Baking weekly? Keep it on the counter, feed once a day.
    • Baking occasionally? Keep it in the fridge and feed once a week. Take it out and give it two or three feedings before you bake.
    • Dark liquid on top? That’s “hooch” — alcohol, meaning it’s hungry. Pour it off and feed. Not a problem.

    Why bother discarding?

    Because without it, the acid concentration climbs until it suppresses the very yeast you’re cultivating, and the volume becomes absurd. Discarding keeps the culture young and the jar manageable.

    When your first loaf disappoints

    A young starter often makes dense bread for the first several bakes even when it looks lively — the population is still stabilising. Give it two or three weeks before you judge it, and see the troubleshooting guide if problems persist.

    2. Rest (12–18 hours). Cover and leave at room temperature. It’s ready when roughly doubled and the surface is bubbled. Cooler kitchen, longer wait.
    3. Shape (5 minutes). Scrape onto a floured counter. Fold the edges into the middle a few times to form a rough ball, then flip seam-side down and drag it toward you a few times to build surface tension.
    4. Second rise (1–2 hours). Rest seam-side up in a floured tea towel in a bowl. Meanwhile preheat your pot and oven to 475°F for at least 30 minutes.
    5. Bake. Tip onto parchment, score once about ½ inch deep, lower into the hot pot. Lid on 20 minutes; lid off 20–25 minutes until deep brown and 205–210°F inside.
    6. Cool 2 hours. Non-negotiable — cutting early makes it gummy.

    What to notice

    This recipe teaches the three variables that govern all bread: hydration (why the dough is sticky and the crumb open), fermentation (why time substitutes for effort), and steam (why the lid goes on first). Everything else you bake is a variation.

    Troubleshooting

    • Spread flat? Over-fermented, or shaping built no tension. Reduce the rest by a few hours next time.

    Buy later, if at all

    • Banneton (proofing basket). Makes a pretty spiral and wicks moisture from the surface. A bowl lined with a floured tea towel does the same job. Nice, not necessary.
    • Lame (scoring blade). A razor on a stick. A sharp paring knife works; a plain razor blade works better and costs almost nothing.
    • Bench scraper. Genuinely useful for handling wet dough and cleaning the counter. Cheap. Buy it when you get tired of dough on your hands.
    • Dough whisk. Mixes shaggy dough slightly better than a spoon. Marginal.

    Skip

    • Bread machines, if your goal is artisan-style loaves. They make a specific kind of soft sandwich bread well and cannot produce an open crumb or a proper crust.
    • Proofing boxes. Your oven with the light on, or the top of the fridge, is free.

    The one upgrade that isn’t equipment

    4. A tight lid

    If steam escapes, the point is lost. It doesn’t need a gasket, just decent contact.

    What does not matter

    • Brand prestige. The bread cannot tell.
    • Colour and enamel finish. Cosmetic. A dark interior hides scorching better; that’s all.
    • Oval vs round. Round suits boules, oval suits bâtards. Round is more versatile.

    Before you buy anything

    If you own any heavy lidded oven-safe pot, use it first. A stock pot with a metal lid, a deep casserole, even a roasting pan with a metal bowl inverted over the loaf will produce most of the benefit. Bake a few loaves, confirm you enjoy this, then spend money.

    Most sourdough advice treats “my loaf didn’t work” as one problem. It isn’t. A gummy loaf, a dense loaf, and a flat loaf fail for different reasons, and fixing the wrong variable is why bakers stay stuck for months.

    Start by identifying which one you actually have.

    You cut it too early

    This is the single most common cause, and the easiest to fix. Bread is still cooking as it cools. Starch needs to set, and steam needs to escape. Cut a loaf at twenty minutes and you release that steam into the crumb, where it condenses and turns pasty.

    Fix: wait at least two hours. For a large, high-hydration loaf, four is better. It is agony and it works.

    It’s underbaked

    Colour is a bad doneness signal — a loaf can look beautifully dark and still be wet inside. Internal temperature is the reliable one. Lean bread is done at roughly 205–210°F (96–99°C) in the centre.

    Fix: check with an instant-read thermometer. If it’s under, put it back in — out of the pot, directly on the rack — for another ten minutes.

    Under-fermented dough

    If the starch hasn’t been broken down by a long enough bulk ferment, the crumb can read as dense and gummy at once. See the next section.

    Dense bread that is cooked through is a fermentation failure, and it nearly always traces back to the starter.

    Your starter wasn’t ready

    A starter that hasn’t peaked doesn’t have the population to raise a loaf. “I fed it this morning” isn’t the test. The test is behaviour: it should roughly double, dome on top, and smell tangy but not like acetone. Use it at or just before peak.

    The float test — a spoonful dropped in water — is a rough proxy, not gospel, but a starter that sinks like a stone is telling you something.

    Bulk fermentation was too short

    Recipes give times, but time is not the variable — temperature is. A dough at 78°F might finish bulk in four hours. The same dough at 65°F might need eight. If you bake by the clock in a cold kitchen, you will consistently under-ferment.

    Fix: judge by the dough, not the timer. You want roughly 30–50% volume increase, a domed and jiggly surface, and some bubbles. Find the warmest spot in your house, or accept a longer clock.

    Too much whole grain, too little water

    Whole wheat and rye absorb far more water than white flour and their bran cuts gluten strands. Swapping in 30% whole wheat without raising hydration reliably produces a brick.

    Flat loaves

    A loaf that spreads into a puddle has lost its structure. Three suspects:

    Over-fermentation

    The opposite failure from dense. Left too long, the gluten network degrades and can no longer hold gas — the dough goes slack, soupy, and sharply sour. It will not recover. Bake it as a flatbread and shorten your bulk next time.

    Weak gluten development

    High-hydration dough needs strength built through stretch-and-folds or coil folds during bulk. Skip them and there’s no network to trap gas.

    Flour matters too: bread flour has more protein than all-purpose and produces a noticeably stronger dough. If you are fighting slack dough, that’s the cheapest fix on this page.

    Shaping that didn’t create tension

    Shaping isn’t a formality — it builds a taut skin that directs expansion upward. If your dough ball slumps immediately on the counter, it has no surface tension. Pre-shape, rest 20 minutes, then shape firmly.

    The one variable most people should change first

    If you only adjust one thing: measure your dough temperature and stop baking by the clock. Nearly every dense loaf and a good share of flat ones come from treating a recipe’s “4 hours” as a fact rather than a description of someone else’s kitchen.

    Steam is the other half

    Oven spring — the fast rise in the first ten minutes — depends on the crust staying soft long enough to expand. That requires steam.
